Our Story

With over 30 years of combined experience in the hospitality industry, Ashley and Julia have spent their careers refining their skills in some of the UK’s most acclaimed Michelin-starred restaurants.

Before re-opening The White Lion, Ashley was Head Chef at the Michelin-starred Sorrel Restaurant in Dorking, working under Steve Drake for five years. Julia previously held the position of Head Pastry Chef at the Michelin-starred Restaurant & Hotel Interlude, led by Jean Delport, for over four years.

Their culinary journey has taken them through a number of prestigious kitchens, where they developed a deep appreciation for both excellence and authenticity. They first met in 2014 while working at The Hardwick in Abergavenny, Wales, under the esteemed chef Stephen Terry. After a few formative years there, they both returned to the south coast of England to continue their careers.

Ashley went on to join the two Michelin-starred Latymer Restaurant at Pennyhill Park, Surrey, working under Michael Wignall. Julia took on a role at the Michelin-starred Ockenden Manor in Cuckfield, West Sussex, under Steven Crane.

Beyond fine dining, both Ashley and Julia have also worked across the broader hospitality landscape—from event catering to helping launch and establish various new ventures. This diverse experience has shaped their vision for what hospitality can be.

Now, they’ve returned to their roots to build something of their own. A place where refined yet unpretentious cooking meets the warmth and character of a true countryside pub. At The White Lion, we’re passionate about flavour, simplicity, and the timeless joy of genuine hospitality.

This journey is about more than just food—it’s about creating a space that celebrates local producers, fosters community connections, and honours the history and charm of its surroundings.
